Grapes are harvested by hand upon reaching perfect maturity. After de-stemming, they undergo cold extraction for 5 days in inox tanks. Selected yeasts are used. Fermentation and extraction take 15 days on average, while barrel ageing last 8 monts followed by fining, filltering and bottling.
